Nestled between the Unzen mountains and the Ariake Sea, the castle town of Shimabara is known for its abundance of pristine spring water—selected as one of Japan’s top 100 natural water sources. This beloved snack is made using generous amounts of this pure spring water. Broad beans are soaked in Shimabara spring water, then crisply fried in vegetable oil. They’re coated with a glaze made from sugar, locally grown ginger, and starch syrup, and then carefully separated by hand, one piece at a time. The subtle sweetness paired with the gentle kick of ginger creates a light, addictive flavor. A humble yet enduring bean confection made with the same methods since the company’s founding in Taishō 3 (1914).
